The Herzog winery created their own cult California Cabernet with their Warnecke Vineyard Chalk Hill Cabernet Sauvignon. The wines have a classic Herzog label, and while they can be consumed within a year or two of their vintage, they age gracefully. 2003 presented an unusual vintage in California. Most of the grapes ripened at the same time and there was a large rush at harvest to pick the myriad of varietals. Given the time constraints not all the grapes were harvested, thus reducing the crop of the vintage. However, as with most vintages that have a lower yield, quality goes up. The Herzog Special Edition Chalk Hill Cabernet Sauvignon 2003 is medium to full-bodied, showcasing vanilla and coffee on the nose ahead of lingering dark fruit, currant, blackberry and sweet cherry notes. Soft and smooth with gentle tannins, with present acidity, indicative of a wine in its peak. On the palate, cherry, vanilla, caramel, followed by a hint of chocolate with earthy notes of leather and tobacco, the finish lingers and offers hints of almond and licorice.
